Loaded Burrito

Ingredients
- 4 large tortillas, warmed up
Cilantro Lime Rice
- cup long grain white rice
- 2 cups water
- 2 tbsp. cilantro, chopped
- 1 tsp. olive oil
- 1 tsp. lime juice
- 1 tsp. lemon juice
- ½ tsp. Salt
Guacamole
- 1 small chunk of red onion
- ¼ cup cilantro
- 1 hass avocado
- Juice of 1 lime
- Salt to taste
Steak
- 1 lb. outside skirt steak, quartered
- Salt and pepper to taste
- Additional toppings of choice such as beans, sour cream and shredded cheese
Directions
- Make the rice by adding rice and water to base of Microwave Rice Maker, add insert, cover and microwave on high power for 5 minutes. Then lower microwave to 50% power and continue cooking for an additional 15 minutes.
- Meanwhile make guacamole by adding red onion and cilantro to base of Supersonic Chopper Compact. Replace cover and pull cord until finely chopped, then add remaining ingredients and continue pulling cord until well combined. Set aside.
- Once rice is finished cooking, uncover, remove insert and add remaining ingredients. Fluff with fork and set aside.
- Season steak on both sides and add to base of MicroPro Grill, and cover in grill position. Cook for 5 minutes then let rest. Slice thinly then cook remaining pieces of steak.
- To assemble, add a scoopful of rice over warmed up tortilla, then guacamole, steak and remaining toppings of choice. Roll closed and if desired, toast lightly on both sides. Serve warm.
